Crunchy Cashew Avocado Salad with Sesame Soy Dressing
Ingredients
For the Dressing
• 3 Tbsp soy sauce
• 1 Tbsp sesame oil
• 2 tsp garlic powder
• 1 Tbsp oil of choice (olive oil, avocado oil, or vegetable oil)
For the Salad
• 1 ½ cups romaine lettuce, chopped
• 1 cup zucchini, cut into matchsticks
• 2 green onions, sliced
• 25 grams mozzarella cheese, chopped into small squares
• 1 avocado, diced into squares
• 1/3 cup cashews, chopped
Instructions
1. Prepare the Dressing: In a small bowl, whisk together the soy sauce, sesame oil, garlic powder, and your oil of choice. Set aside.
2. Assemble the Salad: In a large bowl, layer the romaine lettuce, matchstick-cut zucchini, sliced green onions, mozzarella cheese, diced avocado, and cashews.
