While hosting a crowd can be a blast, it’s also the kind of marathon that leaves you questioning your life choices around hour six. But hey, I survived and conquered another epic day, and I’m here to share how! Spoiler alert: leftovers, meatballs, and some serious multitasking saved the day.

The Hunt: An Epic Conquer on Day 4 of Entertaining a Crowd
MORNING: Operation Clean-Up
After a missed day of housework yesterday, reality hit hard. The hunters were out, and I was left to tame the chaos in the house. Armed with a checklist and a lot of coffee, I tackled the mess like a pro.
Morning Cleaning Checklist:
- Empty and Reload dishwasher: ✅

- Bathrooms blitzed: ✅

Who knew hosting a crowd could turn your laundry room into a war zone? Between endless towels, face cloths, hunting gear, and even tossing in a few loads of guest laundry (because apparently, they packed like it was a weekend getaway), my washing machine deserves a medal.
LUNCH:
Turning Leftovers Into a Feast
Why slave over the stove when yesterday’s meals were amazing? Lunch today was so good: turkey pot pie, crispy french fry wedges, balsamic salmon, sweet corn, and fluffy mashed potatoes. With the oven keeping the pot pie cozy warm and the microwave handling the rest, it was minimal effort for maximum taste.
SUPPER:
Comfort Food, Crowd Style
Dinner featured rigatoni paired with homemade meatballs and a classic Caesar salad. Nothing says “crowd-pleaser” like pasta, and it’s a go-to when you want to impress without breaking a sweat.
Adding fresh garlic and parmesan is my usual move, but today I thought I’d try something a little different. It was a real ‘wing it’ move, but it paid off. Everyone loved them! Even the pickiest eater at the table went back for seconds.
PRO TIPS: Meatballs Freeze Insanely Well!
Meatballs are a perfect freezer-friendly meal prep! Here’s how to do it:
1. Ready When You Are: When you’re craving a hearty meal, simply grab the number of meatballs you need, cook them directly from frozen, or let them thaw first. Perfect for pasta nights, subs, or even soups!
2. Roll & Freeze: After shaping your meatballs, arrange them in a single layer on a flat surface like a baking sheet. This prevents sticking and keeps their shape intact.
3. Initial Freeze: Pop the tray into the freezer for a few hours, or until the meatballs are fully frozen.
4. Bag It Up: Transfer the frozen meatballs to a freezer-safe bag or container. Be sure to label with the date for easy meal planning.
Easy Homemade Meatballs and Rigatoni
INGREDIENTS:
This is the new MEATBALL RECIPE I tried, by Budget Bytes. AMAZ-BALLS!
For the sauce: Classico Tomato Italian Sausage Pepper Onion
Freshly grated Parmigiano Reggiano Cheese.
INSTRUCTIONS:
Boiling meatballs is a great way to cook them, especially if you’re looking for a lighter, softer texture. It’s more a restaurant style. Here’s how you can do it:
How to Boil Meatballs:
1. Prepare the Meatballs:
- Roll your meatballs to your desired size, making sure they’re all about the same size for even cooking. You can use beef, turkey, chicken, or a mix of meats.
- Optionally, season the meatballs with salt, pepper, herbs, and any other spices you like. Again, I used this MEATBALL RECIPE by Budget Bytes.
2. Boil Water or Broth:
- Fill a large pot with water or broth (for added flavor) — enough to fully submerge the meatballs. Bring the water or broth to a gentle boil over medium-high heat.
- If you want extra flavor, you can add aromatics like garlic, onions, herbs, or a bouillon cube to the boiling liquid.
3. Cook the Meatballs:
- Once the water or broth is boiling, carefully drop the meatballs into the pot one by one. Make sure not to overcrowd the pot, as this can cause them to stick together.
- Lower the heat to a simmer (gentle bubbling) and let the meatballs cook for about 15–20 minutes, depending on their size.
4. Check for Doneness:
- After the cooking time, check the meatballs for doneness. They should float to the surface when they’re cooked through.
- You can also check with a meat thermometer—make sure it reads at least 160°F (71°C) for ground beef or pork, or 165°F (74°C) for poultry.
5. Serving:
- Once cooked, remove the meatballs from the liquid and place in the meat sauce (Classico Tomato Italian Sausage Pepper Onion). Give it a good mix until the sauce is warm as well. Serve them with pasta, on subs, or as an appetizer with a dipping sauce!
Boiling is a simple, hands-off cooking method that works well for soft, tender meatballs. It’s my go-to method of choice!
Homemade Caesar Salad
Homemade Caesar Salad Ingredients I Used:
- Romaine lettuce
- Classic Litehouse Caesar dressing
- Restaurant-Style Caesar Salad Croutons or try making your own croutons! This RECIPE is amazing!
- Freshly cooked Bob’s Bacon
- Freshly grated Parmigiano Reggiano Cheese.
The result? Clean plates and satisfied guests. Win-win.

EVENING WRAP-UP: Winding Down
Once the crowd was fed and happy, it was time to clean up and wind down. Dishwasher loaded, counters wiped, and I finally got to put my feet up. Pro tip: Nothing beats a quiet moment with a cup of tea after a full day of hosting.
