Ingredients (Serves 2-3)

• ½ cucumber, sliced thinly into noodles (avoid the center—it’s too watery)

• ⅓ carrot, sliced thinly into noodles

• ¼ celery, sliced thinly into noodles

• ⅓ cup linguine, cooked

• 1 Tbsp butter

• 6-8 fresh cloves of garlic, minced

• 1 tsp garlic powder, to taste

• Salt, to taste

• Parmesan cheese, freshly grated

• Shrimp (fresh or frozen, peeled and deveined) This is what I used.

Instructions

1. Prep the Vegetable Noodles

• Use a vegetable peeler, spiralizer, or knife to slice the cucumber, carrot, and celery into thin, noodle-like strips.

• Set aside and keep raw for a crisp texture. (Don’t slice the center of the cucumber—it’s too watery.)

2. Cook the Linguine

• Boil ⅓ cup of linguine in salted water until al dente.

• Drain and set aside.

3. Sauté the Shrimp

• In a pan, melt 1 Tbsp butter over medium heat.

• Add minced garlic, a sprinkle of garlic powder, and shrimp.

• Cook for 2-3 minutes per side, or until shrimp turn pink and opaque.

• Season with salt to taste.

4. Warm the Vegetable Noodles (Optional, but recommended!)

• Just before serving, microwave the veggie noodles for 10-15 seconds—just enough to take the chill off but keep them crunchy.

5. Assemble & Serve

• Mix the vegetable noodles and linguine together.
