If you’ve ever stood in front of the fridge at lunchtime wondering if cheese and crackers count as a balanced meal, welcome. You’re among friends.
One thing I’ve learned on my weight loss journey after 40 is that complicated meals rarely make it onto my plate. I don’t have the time, the energy, or the desire to create Pinterest-worthy lunches every single day. What I do need is something that’s quick, filling, packed with protein, and doesn’t leave me searching the pantry an hour later.

Today’s lunch is exactly that.
Today’s Simple High-Protein Creamy Ranch Tuna Salad
- 1 can of tuna in water
- 2 tablespoons Chosen Foods Ranch Dressing
- 2 tablespoons plain Oikos Greek yogurt
- 1 large tomato with a sprinkle of pepper
- 2 pickles
- Water infused with fresh watermelon and cucumber slices
That’s it. There’s no cooking. No fancy ingredients. No “meal prep Sunday” required.
Of course, if you like a little more crunch or want to switch things up, this tuna mixture is easy to customize. Try adding chopped celery, green onion, red onion, cucumber, bell peppers, fresh dill, parsley, or even a squeeze of lemon juice. Sometimes I’ll use whatever vegetables need to be used up in the fridge.
Today, though, I kept it simple—and honestly, that’s one of the reasons this lunch works so well for me. When healthy eating is easy, I’m much more likely to stick with it.

Eating More Protein After 40

This lunch delivers around 40 grams of protein, which is enough to keep me satisfied well into the afternoon.
The Secret? Making Tuna Taste Good
Plain tuna has a reputation.
Let’s be honest—it can taste like disappointment straight out of the can.
Mixing it with a little Chosen Foods Ranch Dressing (my absolute fav lately!) and plain Greek yogurt makes it creamy, flavourful, and surprisingly satisfying without turning it into a calorie bomb. The Greek yogurt also sneaks in even more protein.
The tomato adds freshness, the pickles bring the crunch and tang, and suddenly lunch feels like an actual meal instead of survival food.
Don’t Underestimate Simple Meals
Let’s be honest—my lunch isn’t exactly Instagram-worthy. Probably not even close.
But, sometimes healthy eating is opening a can of tuna, slicing a tomato, grabbing a couple of pickles, and calling it lunch.
And you know what?
That’s perfectly okay.
Consistency beats perfection every single time.
“Fancy” Watermelon and Cucumber Water
My drink today was simply water infused with watermelon and cucumber slices, made the night before.
It feels a little spa-like, even if I’m drinking it while answering emails, folding laundry, or trying to remember why I walked into the room in the first place.
Sometimes the smallest touches make healthy habits feel a little more enjoyable and romantic.

If you’re over 40 and trying to lose weight, don’t feel pressured to reinvent lunch every day.
Simple meals can absolutely support your goals. They save time, reduce decision fatigue, and make healthy eating feel sustainable—which, in my opinion, matters far more than creating elaborate recipes you’ll only make once.
Now if someone could invent a vegetable that tastes like fresh-baked cookies, we’d really be onto something.
