Our Birthday Cake Tradition

There’s something really special about birthday cakes that don’t come from a box of expectations, but from a mix of ideas that come together in a kitchen with love.

In our house, we’ve always liked making different birthday cakes for each other every year. It’s become a little tradition—less about perfection, more about trying something new with a bit of spontaneous pizazz.

This year, for my dad’s birthday, we started with something simple and nostalgic: a Betty Crocker cherry chip cake mix. Something familiar, reliable, almost like a childhood memory.

But then comes the fun part—building it into something entirely its own.

Instead of stopping at the box, we layered it with a homemade vanilla frosting from Sugar Spun Run. I used her exact recipe, just swapping the heavy cream for 10% cream since I didn’t have any on hand. Still turned out amazing.

This frosting always feels soft and classic—nothing too complicated, just sweet enough to let everything else shine.

I also added a strawberry cherry filling inspired by Amy Cakes Bakes. It’s bright, slightly sweet and tangy, and gives the whole cake an unexpected lift in flavor. It really makes everything feel more layered and homemade.

A little mixing. A little matching. A little improvising.

Over the years, this “build-your-own birthday cake” tradition has become more meaningful than any single recipe. Because it isn’t really about the cake—it’s about paying attention. About knowing someone well enough to think: this flavor feels like them or this combination will make them smile. Much like finding the right words for a birthday card.

And somehow, it always does.

This year’s cherry chip, vanilla, and strawberry-cherry combination turned into something bright and slightly nostalgic—sweet, a little tart, and completely personal. Not perfect in a bakery-window way. Better in a “this was made for you” way.

And I think that’s the whole point.

This Year’s Cherry Chip Birthday Cake

Prepare and bake according to the package directions. Allow the cake layers to cool completely before assembling.

Vanilla Frosting

For the frosting, I used the vanilla frosting recipe from Sugar Spun Run. The only change I made was substituting heavy cream for 10% cream because that’s what I had in the fridge.

Strawberry Cherry Filling

For the filling, I used the cherry filling recipe from Amy Cakes Bakes, but made it with half cherries and half strawberries for a little extra sweetness and flavour.

How I Assembled the Cake

  1. Bake and cool the cherry chip cake layers.
  2. Prepare the vanilla frosting.
  3. Make the strawberry cherry filling and allow it to cool.
  4. Place one cake layer on a serving plate.
  5. Spread a layer of strawberry cherry filling over the cake.
  6. Add the second cake layer and repeat if making multiple layers.
  7. Frost the top and sides of the cake with vanilla frosting.
  8. Create a shallow well in the frosting on top of the cake and spoon the remaining strawberry cherry filling into the center.
  9. Slice, serve, and celebrate.

What started as a simple birthday surprise has become one of our favourite family traditions—and one we’ll probably keep carrying on for years to come.
