There are certain smells that can instantly time travel you.
For me, it’s hot oil and crispy batter — the kind that means dinner is going to be something my grandma didn’t measure with love as much as she just knew.
This battered fish recipe has been in our family forever. It’s not fancy. It’s not trying to be healthy. It’s the kind of meal that quietly says, yes, we are frying this in oil and yes, it’s going to be worth it.
And honestly? It always is.
A fishing family kind of dinner
My grandparents have been fishing for years — like, years-years. The kind of people who don’t just “go fishing” as a hobby, but as a rhythm of life. Fresh air, early mornings, quiet patience… and somehow, they’re still out there doing it and staying strong through it all.
So it makes sense that so many dinners at their house involved fish. Lots of fish. Battered, fried, golden, and served up like it was the most normal thing in the world (because to them, it was).
Every once in a while, they’d even send us home with a few fillets like little edible gifts. Honestly, that felt like winning the lottery when you were a kid.
Fish and chips… or just the fish (depending on the day)
Back in the day, we’d do the full fish-and-chips situation. Very committed. Very “we’ll worry about vegetables tomorrow.”
Lately though, we’ve simplified it a bit. Usually it’s just the battered fish with some corn on the side for something slightly less chaotic in the nutrition department. Or a quick homemade coleslaw if I’m feeling like I have my life together (rare, but it happens).
Tonight? Definitely the easy version. It’s been one of those days where cooking needed to be minimal effort and maximum comfort.
And this recipe delivers exactly that.
Grandma Altman’s Crispy Fish Batter Recipe
This is the batter that somehow always turns out light, crisp, and a little bit addictive.
Ingredients
- 2 cups pastry flour
- 1 tsp baking powder
- 2 tsp salt
- 1 tsp garlic powder
- 1 cup milk
- 1/3 cup water (or slightly less, depending on thickness)
Method

1. Mix all ingredients together in a bowl until smooth. The batter should be thick enough to coat the fish but still loose enough to drip slightly.

2. Heat oil in a deep pan.

3. To test if it’s ready, drop a tiny bit of batter into the oil — if it floats to the top immediately, you’re good to go.


4. Dip fish fillets into the batter, coating evenly.

5. Carefully place into hot oil and fry until golden and crispy on both sides.

6. Drain on paper towel (if you can resist eating it immediately… which is unlikely).
A few things no one tells you
- You will absolutely convince yourself “just one piece” and then somehow eat three.
- The kitchen will smell like a cozy seaside chip shop for hours afterward.
- And somehow, it always tastes better when you’re slightly tired and not overthinking anything in life.
